Made from Spain’s prized Ibérico pigs, this Jamón Ibérico is produced from pigs finished on a diet of grain. It offers an excellent introduction to the distinctive flavor of Ibérico ham. For the ultimate experience, Jamón Ibérico de Bellota comes from free-range Ibérico pigs that feast on acorns, or bellotas, in Spain’s dehesa forests.
This boneless Jamón Ibérico is cured in the beautiful mountain village of La Alberca in Salamanca. For more than two years, the cool, dry mountain air slowly transforms the ham as Santiago Martín and his family at Jamones Fermín carefully oversee the process. Every ham is inspected by hand before it leaves their facility.
Boneless Jamón Ibérico is wonderfully easy to enjoy. Slice it thinly by hand, use a mechanical slicer, or divide it into smaller pieces to share with family and friends. For the thinnest slices, chill the ham until very firm, but do not freeze it completely. Then allow the slices to come to room temperature before serving so the marbling softens and the full aroma and flavor emerge.
