Sobrasada soft sausage is rich and smoky. Most often it's served as a canapé, spread on bread and broiled until it begins to melt. It also adds amazing flavor to soups and sautés.

Sobrasada originated in Mallorca, the beautiful island in the Mediterranean. Peregrino sobrasada is made with pasture-raised heritage pork by a small sausage maker in Atlanta, following a classic recipe.

Originally the sausage makers of Menorca could not fully dry-cure their sausages because of the humid, semi-tropical climate, so their sausages were aged just a few weeks, leaving them semi-soft. This finely-ground soft pork sausage is traditionally spread on bread and toasted. We also like to add a slice to Spanish stews, giving them a punch of rich, smoky flavor.

Remove casing and cook fully before eating. Keep frozen, use with in a week of thawing.
