Crisp Spanish Potato Chips

These irresistible potato chips have a crispy crunch and golden color. Premium potatoes from La Rioja are sliced super thin and cooked in olive oil, creating little bubbles and pockets to make them extra crunchy. Then they are sprinkled with mineral salt from the Valley of Añana, famed since Roman times for its clean, flavorful salt. Because the potatoes of the region are so flavorful, only a little salt is added to accent the chips.
When we lived in Spain, we would visit potato chip stands at fairs, where potatoes were freshly sliced and added into a roiling cauldron of olive oil in front of our eyes. The chips were cooked until golden, then sprinkled with salt and served in a paper cone. The result was a supremely crispy potato chip with tiny bubbles in the surface that would hold a touch of olive oil and sea salt. Pafritas has captured this delicious flavor.
The mineral salt comes from the historic Valley of Añana, where salt has been harvested for thousands of years using brine from salt springs that dries on a beautiful patchwork of wooden platforms. This salt is pure and clean, with no plastic residues you might find in sea salt.
