Ibérico pork is a rich, dark meat marbled with tasty fat, perfect for making exceptional chorizo sausages. Spanish Ibérico pigs are raised outdoors in the dehesa forests of southwest Spain.
Smoked paprika, called Pimentón de La Vera, is the signature flavor of chorizo, and it adds a nice smokiness.
Ibérico chorizo can be stored for several weeks in the freezer. Cook fully before serving. USDA inspected.
