Escalivada is a bright and delicious dish from Catalunya, featuring fresh eggplant, onions and bell peppers sautéed in olive oil. The peppers are wood-fire roasted and peeled by hand. Escalivada means “to cook over fire,” the way farmers and shepherds would prepare this simple and delicious dish. Serve alongside your favorite fish or grilled meat or enjoy on toasted bread.
Chef José Andrés selected the artisans at Rosara in Navarra to prepare this delicious dish for his personal line of traditional Spanish products. Rosara uses only fresh vegetables from the field with no additives or preservatives.
