Cod, Truffle and Blue Cheese Croquettes
These delicious croquetas come from the Basque restaurant Sagartoki, named the best tapas bar in Spain! With their crisp shell and rich creamy center, croquetas have long been a favorite tapa across Spain.
This trio includes three types. First are croquetas with salt cod and caramelized onions, balancing salty and sweet. Second are croquetas with mild blue cheese and walnuts. Finally, we include the croquetas de trufa, made with fresh black truffles.
Chef Senén González grew up at his parents’ restaurant in the Basque Country. He opened the Sagartoki restaurant with a mission to cook Spain’s very best pintxos and tapas. Twice he has won the award for the Best Tapa in Spain, and his tortilla española won a national competition. Now he presents his exceptional tapas for you to enjoy at home, including these delicious croquetas.
