Harvested by hand with line and hook from the cool seas of Galicia, each tuna is cooked fresh and packed by hand in olive oil, preserving the delicate, rich meat of this prized fish.
Bonito del Norte is a special type of albacore found off the coast of northern Spain. There the tuna gather to feast on anchovies, adding layers of fat that bring a richness and tenderness to the meat. The special rod-and-hook fishing method avoids the stress of harvesting by net. And the fish are never frozen, but cooked fresh after harvest in small batches to preserve the silky smooth quality of this amazing tuna.
Galicia is famous for the quality of its Bonito del Norte harvest. Peregrino Bonito del Norte tuna is prepared in season from fish purchased daily from the port in Burela. It is cut by hand, placed in each tin and covered with olive oil.
