These slices are from the Jamon or back leg of the Iberico pig, which is more prized than the Paleta or front shoulder, because it is cured twice as long and has a fuller, more intense flavor.

Free range Iberico pigs live a privileged life, wandering the Dehesa oak forests of western Spain. This antioxidant quality allows the hams to be cured for over 2 years without spoiling. They lose an amazing 40% of their weight as the fat drips away, bathing the ham in the flavors of Spain's countryside. He opended the package to let a few of us try this our as we had never eaten--Sliced Jamón Ibérico de Bellota--before! Well, I must tell you that the flavor was amazing!
