How To Cook

STEP 1

In a small bowl, mix all ingredients except extra virgin olive oil. Wash and prepare turkey for cooking according to your favorite recipe.

STEP 2

Place turkey, breast side up, on roasting rack in a roasting pan. Sprinkle about 1 tablespoon of the rub mixture inside turkey. Stuff turkey with dressing or vegetables, if desired. Brush turkey all over with extra virgin olive oil. Spread remaining rub mixture all over the surface and under the skin of the turkey.

STEP 3

Roast turkey according to your favorite recipe.

Cook’s note: Use half the amount of spice rub for roast chicken.

This is an incredible 'secret weapon' that is so easy to pull off. Your guests will not be able to figure out how you got such a subtle, smoky flavor without roasting over an actual wood fire. Hope you enjoy as much as we do.
