Crisp toast rounds baked with savory Sobrasada and melted baby Manchego cheese make for a scrumptious appetizer. Sobrasada is a soft sausage with origins in the Balearic Islands. It has the smoky flavor of chorizo, but a smooth texture perfect for melting under a broiler.

How To Cook

STEP 1

Place bread slices on an ungreased baking sheet. Bake at 400°F for 8-10 minutes, or until lightly browned. While bread is baking, slice baby Manchego cheese into 36 small pieces, each about 1 1/2 inches in diameter. 

STEP 2

Remove bread from oven. Spread each slice of toasted bread with about 1 ½ tbsp sobrasada, followed by one slice of baby Manchego cheese. Return baking sheet to oven and bake for approximately 10 minutes, or until cheese is melted and slightly browned. Sprinkle each slice with a little chopped parsley if desired. 

Serve warm with a cold glass of beer or sidra.

Have never seen a spreadable chorizo before. Tried this and is wonderful. Great flavor, used with gouda cheese which I had on hand and small rye rolls. Flavors worked well together. Will definitely purchase again.
