Unbelievably, the antioxidant rich fat is good for you, like extra virgin olive oil. Really! That is why they call acorn-fed Ibérico pigs 'walking olive trees.'

Forget those dry tenderloins from the supermarket, this delicious cut of red meat is perfect for the grill or for roasting in the oven. We like to season it with salt and pepper, then sizzle on the grill until it has a tasty charred outside and medium rare interior.

Cinco Jotas Ibérico de Bellota pork is made from pasture-raised, acorn-fed Ibérico pigs raised near the town of Jabugo. They live their lives outdoors, grazing on fresh grasses and herbs, finally feasting on sweet acorns in the fall. This exceptional diet adds a deep flavor and a fat that literally melts in your mouth. All that exercise integrates the fat into the muscle, marbling the solomillo with flavor.

You will receive your solomillo tenderloins frozen, packed in dry ice. Thaw to room temperature before cooking. Serve with a nice bottle of vino and a warm loaf of crusty bread.

The USDA recommends cooking all whole cuts of meat (including pork) to 145°F, as measured with a food thermometer placed in the thickest part of the meat.
