These big, juicy links of bratwurst sausage have a delicious Iberico pork flavor. They are made with purebred Iberico pork from animals pasture-raised on the Trails End Ranch in Texas. They wander the ranch eating acorns, mesquite beans and prickly pear. What an amazing blend of Spanish Iberico and Texas countryside!

Texas Iberico® bratwurst is carefully blended and stuffed in natural casings by the Spotted Trotter curing house in Georgia, famous for its artisan methods. The sausage master hardwood smokes the brats for a delicious flavor ideal for outdoor grilling.

Texas Iberico® pigs live outside their whole lives, cared for by Ashly Martin, a third-generation rancher in Comfort, Texas. The beautiful ranch is studded with Texas live oak and mesquite trees, as well as prickly pear cactus. The pigs wander the ranch together eating everything they can find, including acorns, herbs, sweet mesquite beans and prickly pear fruit. This special Texan diet adds complex flavor to the pork, perfect for making an excellent sausage.

Texas Iberico® pigs are never given antibiotics and they live their entire lives outside. They are certified Animal Welfare Approved by the AGW organization.

A few years ago, a group of purebred Ibérico pigs was flown from Spain to America. Some arrived on the 1500-acre ranch in Texas, a wild countryside similar to western Spain. The Ibérico pigs adapted immediately, grazing across the open countryside. In the process, the pigs clear the brush and turn the soil, a process that is regenerative to the land.
