Fresh red peppers are harvested each fall in the region of Lodosa. They are charred over open flame, then cleaned by hand with no water used. This process preserves the intense sweet, smoky flavor.
We love to nibble on them as a tapa, add them to salads or serve them on toast. They also have the perfect shape for stuffing. Try filling them with tuna salad or a young Manchego cheese, then heat them in the oven for a few minutes. ¡Delicioso! They make a beautiful accent to paella as well.
