Lacón is a fully cooked, smoked Galician-style ham, traditionally served with roasted potatoes and smoked paprika, but also great as a cold cut for sandwiches. Our artisan curing house uses only pasture-raised pork, roasted and smoked over hardwood.

Lacón is best served without baking because heating the ham can make it dry. It is perfect for picnics or outdoor parties and a tasty centerpiece for holiday meals.

The verdant region of Galicia in northwest Spain is too humid for traditional methods of curing ham, so they developed a way of preserving pork by salting and smoking. We worked with an artisan curing house in Georgia to make this lacón ham following a classic recipe.

While we do not recommend cooking this ham, here are instructions: wrap the ham tightly in foil and bake at 275°F for 10 minutes per pound. Place a shallow pan of water below the ham to retain moisture. Alternatively, you can wrap individual slices in foil and heat them as needed.
