These pieces of flavorful bacon are a marriage of the famous Spanish breed and Texas ranchland. The pure Iberico pork bellies are salted and hickory smoked for a country-style bacon with a rich texture and intense smoky flavor. It is more intense and salty than bland supermarket bacon. These pieces are delicious served with eggs, added to a burger or sprinkled on a salad.

Our pure Iberico breed pigs live their lives outdoors on the Trails End Ranch run by Ashly Martin, a third-generation rancher in Comfort, Texas. The countryside is shaded by Texas live oak, mesquite trees and prickly pear cactus. The pigs roam the ranch, feasting on acorns, grass, herbs, sweet mesquite beans, ripe prickly pear fruit and any other tasty treats they can find. This uniquely Texan diet gives the pork intense flavor, and plentiful exercise marbles the pork beautifully.

In 2013, a herd of 100% Iberico pigs was flown in from Spain. The hearty animals thrived in Texas, a similar countryside to the 'dehesa' rangeland of western Spain. All the Texas Iberico® pigs live outside their whole lives, wandering the pasture together with over an acre of rangeland per pig.

This bacon is made at a small family curing house using salt and natural hickory smoke. These ends and pieces are cured and ready to cook.
