A small family-run cheesemaker created this flight of his favorites, including a flavorful Manchego, a cheese infused with fresh rosemary and a cheese with red wine. Cheesemaker Alfonso Alvarez raises his own flocks of free-ranging Manchega sheep and goats. His family ensures they are well fed and cared for to produce the finest fresh milk. This high quality raw milk produces cheeses of profound flavor and appealing texture.
Manchego is Spain's signature cheese, and this artisan version is an excellent example. Aged just over 90 days, it has a mild yet complex flavor with just a touch of sharpness. It has a rich texture with a firm bite but is not hard and crumbly like a 'reserva' Manchego.
The second cheese, made of sheep's milk, has a smooth texture and mild flavor. Fresh rosemary leaves are ground and added to the milk before the cheese begins the aging process. Each bite has a balanced, aromatic herbal taste evoking the countryside of La Mancha.
The third is a mild, tangy sheep's milk cheese mixed with a hearty red wine, which adds a beautiful burgundy color and pleasant wine aroma.
