This short-grained rice matures very slowly as it grows in the Albufera Nature Reserve near Valencia.

Bomba is a rare variety that almost disappeared because it requires lots of labor to grow. Fortunately it was rescued in the 20th century by Spanish chefs and today Bomba is available to restaurants and home cooks alike.

Many paellas are called "arroces" (rices) in Spain, and this is no coincidence – great short grained rice is essential for paella. Each grain of this special rice absorbs flavor but remains distinct and intact. Italian Arborio rice is too creamy, Asian rice is too sticky and long grain is not absorbent enough.
