Tempt your senses with this full-flavored sheep’s milk cheese boasting a deep milky aroma, firm texture and intense, nutty taste. Aged for over a year, it has a full flavor yet a creamier consistency than most aged cheeses.

Aged for 14 months, Ilbesa’s DM sheep’s milk cheese is similar in flavor profile to Manchego or Zamorano, with a rich and nutty flavor. Complement the intense taste with a glass of Spanish red wine, olives and crusty bread. It also pairs well with grilled meats, salads and omelets.

Since 1938, when Domingo Martín began the company as a small creamery, it has expanded into a leading producer of top quality cheese. Highly acclaimed for its fine, artisan sheep’s milk cheese, DM (named for the founder) enjoys an esteemed reputation throughout the industry. The DM aged sheep's milk cheese brought home gold medals from the World Cheese Awards in 2008 and 2010.

Use and Care

This cheese may be refrigerated up to 6 months when unopened, and 3 to 4 weeks after opening. We do not recommend freezing cheese as it degrades the quality of the product.

Eating the rind is not recommended.

Spots on the exterior can be wiped off with a cloth lightly dampened with olive oil or can be cut off.
