Serrano Ham with Melon

Servings: 6

Ingredients:

1 melon, approximately 1 kg
12 large, thin slices of Serrano ham bearing the
1 grated carrot
Juice of 1 lemon
1 finely chopped spring onion
6 tbsps olive oil
1/2 tbsp wine vinegar
Salt and freshly-ground black pepper

Preparation:

Cut the melon in half and, using a special scoop (or a small coffee spoon), form melon balls. Place in a salad bowl. Mix the oil with the lemon juice, vinegar, salt and pepper and pour over the melon. Add the grated carrot and spring onion. Stir well together and cool in the refrigerator for two hours before serving. Form cone shapes with the SERRANO ham and serve with the melon.
