Scrambled Eggs and Mushrooms with Serrano Ham

Servings: 6

Ingredients:

300 gr Serrano ham
7 beaten eggs
150 gr sliced mushrooms
4 tbsps olive oil
Freshly chopped parsley

Preparation:

Saute the Serrano ham and the sliced mushrooms in olive oil in a large pan over a high heat. Beat the eggs with the parsley. Turn down the heat then pour on the egg mixture, stirring all the time. Serve as soon as the eggs have set. Garnish with fried bread.
