Peel the avocados, cut in half lengthwise and remove the pit. Cut across each half forming slices. Prepare a sauce by beating together the oil, vinegar, salt and pepper. Add the finely-chopped hard-boiled eggs and the chopped onion. Arrange the avocado slices on a serving-dish with the slices of serrano ham and pour a little sauce over the avocados.
