Ingredients:
3 ripe avocados
6 tbsps olive oil
3 tbsps vinegar
3 hard-boiled eggs
1 1/2 onions
12 very thin slices of Serrano ham
Salt
Freshly-ground black pepper
Preparation:
Peel the avocados, cut in half lengthwise and remove the stone. Cut across each half forming slices. Prepare a sauce by beating together the oil, vinegar, salt and pepper. Add the finely-chopped hard-boiled eggs and the chopped onion. Arrange the avocado slices on a serving-dish with the slices of SERRANO ham and pour a little sauce over the avocados.
